Since Ann at ‘Pig Pig’s Corner’ reviewed the Morphy Richards Soup Maker a couple of weeks ago, she has tried a couple of recipes using it. As regular visitors to ‘Home of the House Proud’ will be aware, we have been working very closely with Delia Online and Christian Aid to support the ‘Super Soup Lunch’ which saw events take place across the country several weeks ago (on Friday 25th March).

Throughout March, visitors to Delia Online were invited to upload their favourite soup recipe to the website for the chance to win a Morphy Richards Soup Maker. In total, there were five Soup Makers up for grabs. The winners have now been announced and over the course of the next five days, we’re going to bring you a winning recipe each day. Today’s recipe is for a delicious Asparagus and Roasted Garlic Soup and was submitted to Delia Online by Michelle Platman.

Asparagus & Roasted Garlic Soup

 

Asparagus and Roasted Garlic Soup. Please Note: Image is for illustration purposes only and is not of the actual recipe.

 
(Serves 4)
Start preparation the previous day, if possible. Pre-heat oven to 1800C/3500/Gas Mark 4
(If you haven’t got much time, then you can use any commercial ready-to-use chopped garlic or garlic paste.)

Ingredients

1x Large glass jar, sealable (e.g. a Kilner jar)
3x Heads of good quality garlic
1 Pint extra virgin olive oil
3-4 sprigs of fresh rosemary
1x Large onion, peeled and finely sliced
1 lb good asparagus (if using older, more stringy asparagus, double the quantity)
Cut into 2” pieces
1 tbsp plain flour
1½ Pints good vegetable stock
Salt, white pepper
¼ pint single cream

To garnish:
2x Tbsp fresh flat leaf parsley, chopped
Zest of 1 lemon, grated
Garlic croutons (optional)

Method

  • Sterilise the glass jar by putting it in the oven for 10 minutes. Remove from oven and allow to cool
  • To roast the garlic, remove excess papery skin from the garlic heads and put them into a small baking tin, with three tbsps of the olive oil. Roast for 15-20 minutes, or until they are all soft. Remove from oven and allow to cool. Trim off the top 1 cm of garlic heads. Pack the garlic and springs of rosemary into the sterilised jar and completely cover the garlic with the remaining olive oil. Seal the jar and leave overnight
  • The next day: Heat 4-5 tbsps of the olive oil from the jar in a saucepan until hot
  • Cook the chopped onion gently in the pan for about 5 minutes
  • Peel and finely chop 4 cloves of the roasted garlic and add to the pan
  • Cook gently for a further 5 minutes, without colouring
  • Add the asparagus and cook gently for 2 minutes
  • Stir in the flour and cook gently for 2 minutes
  • Gradually add the stock, stirring all the time. Cover, bring to the boil and simmer gently for about 15-20 minutes, until the asparagus is soft. Cool a little, then puree in a liquidiser until very smooth
  • Pass through a fine sieve to remove any stringy fibres
  • Add the cream and reheat gently, but do not boil, as this will curdle the soup
  • Season to taste and serve garnished with chopped parsley, lemon zest and garlic croutons. This soup is delicious chilled, too. It freezes beautifully

As you may have seen on Home of the House Proud, we’ve been working with Christian Aid to support the ‘Super Soup Lunch’ campaign taking place on 25th of March.

Christian Aid are inviting people from all over the country to put aside their sandwiches, get together at work, school, home or in the community, and share a hearty bowl of homemade soup to raise money for the fight to end poverty.

Today, we’re bringing you the last in the series of our worldwide soup maker recipes that Christian Aid has kindly provided to ‘Home of the House Proud’ to celebrate their ‘Super Soup Lunch’ events that are due to take place up and down the country this Friday (25th March). Today’s recipe is from India, just one of the many countries that Christian Aid Supports. The recipe is for a delightful Spiced Squash and Tomato Soup. Why not try it and let us know what you think?

Spiced Squash and Tomato Soup

Recipe serves 4

Ingredients

6x Large tomatoes

1xLarge onion, finely diced

1x Clove of garlic, finely chopped

1x Small pumpkin or other seasonal squash, peeled and cubed

1 ½ Pints of water

1x Teaspoon of ground cumin

1x Teaspoon of ground cinnamon

1x Teaspoon of salt

Red chillies, as many or few as you want, depending on how hot you like your soup

Coriander

Method

  • Boil tomatoes for five minutes and leave to cool
  • Heat oil in saucepan; add onions, garlic and chillies and cook until they become aromatic
  • Peel the skin of the cooled tomatoes. Be careful as they can burn once boiled. Add the tomatoes to the onions, garlic and chillies
  • Add the water and the diced squash and leave to boil for 20 minutes or until the squash is soft
  • Take off the heat and allow to cool a little. Then using a hand blender, blend the ingredients until the consistency is smooth
  • Place back on a medium heat and add the cinnamon, cumin and salt, stir and leave to simmer for 15 minutes. Serve in a bowl and garnish with fresh coriander

With little under two weeks until Christian Aid’s ‘Super Soup Lunches’ take place across the country to raise money for some of the less fortunate people around the world, today we’re going to tickle the taste buds of visitors to ‘Home of the House Proud’ with a delicious Ethiopian Vegetable Stew Recipe or as it’s known in Ethiopia, Alecha Wat. Ethiopia is just one of the many countries that money raised by Christian Aid goes to.

Ethiopian Vegetable Stew

Recipe serves 8

Ingredients

1x Onion

4x Carrots

4x Medium-sized potatoes

1x Green Cabbage

1x Can of tinned tomatoes

2x Fresh Tomatoes

4x Green peppers

2x Teaspoons of salt

1x Teaspoon of ground ginger

3x Cups of water

4x Tablespoons of vegetable oil

Method

  • In a large saucepan, sauté the chopped onion in the oil until soft, but not brown
  • Add the carrots, peeled and cut into one-inch slices; the green peppers, cleaned and cut into quarters; three cups of water; the tinned tomatoes; the salt; and half the ground ginger
  • Cover with a lid and cook for 10 minutes
  • Add the potatoes cut in thick slices
  • Plunge the fresh tomatoes in boiling water, leave to cool and then remove the skins. Cut into eight wedges each and add to mixture
  • Cut the cabbage into one-inch wide wedges and add to mixture
  • Cook until vegetables are tender
  • Season to taste and serve

Following the launch of our Soup Maker several weeks ago, we are working closely with the lovely folk at Delia Online and they are currently running a competition to giveaway five of the much sought after Soup Makers.

To support and promote Christian Aid’s ‘Super Soup Lunch’, visitors to Delia Online are being asked to upload their favourite soup recipes for the chance to win one of the machines. Between now and 25th March (the day of ‘Super Soup Lunch’), we’re going to share some of our favourite recipes with you that have been submitted into the competition. Today’s recipe is for a North African Winter Warmer. Why not have a go at making it yourself? We’d love you to get in touch with us if you do.

Ingredients

 
2x Teaspoons of caraway seeds
2x Teaspoons of cumin seeds
1x Teaspoon of coriander seeds
2x Teaspoons paprika
1x White onion chopped
4x Cloves garlic chopped finely
2x Fresh chillies chopped
2x Sweet potatoes peeled and diced
275mg Yellow lentils

4 Tablespoons of tahini
2x Litres vegetable stock
1x 400g can chick peas
1x Large handful fresh spinach or 4 lumps frozen spinach
Juice of 1 lemon
Handful flaked almonds
Drizzle sesame oil

Method

  • Dry fry caraway seeds, cumin seeds and coriander seeds until oils release. Remove from heat and crush in a pestle and mortar
  • Meanwhile, fry onion until soft, then add garlic and chillies. Fry over a moderate heat for 5 or so minutes
  • Add sweet potatoes and fry for 2-3 minutes
  • Add crushed spices and paprika, stir well
  • Add lentils and fry for 2 minutes, stirring constantly
  • Add stock and boil for 15 minutes
  • Lower heat, season, add chick peas and tahini and simmer for 1 hour
  • Add spinach and simmer for 15 minutes
  • Add lemon juice, turn heat down to very low for 15 minutes
  • Toast the flaked almonds until browning, then serve soup with sprinkling of almonds and small drizzle of sesame oil

To celebrate the launch of our Soup Maker, we’re working closely with Delia Online and Christian Aid to support ‘Super Soup Lunch’, which takes place across the country on Friday 25th March 2011. Our latest blog post ahead of this exciting event is all about selecting a location for your ‘Super Soup Lunch’. You may already have an idea about where you’re going to hold it, but if not, here are some suggestions about how you can get involved and support this great cause:

  • Get your work colleagues to make a voluntary donation to enter their soup in a tasting competition at work. Soups could be themed e.g. colours of the rainbow or they have to include certain ingredients.

 

  • Fancy a warming bowlful at home? Ask family and friends to make a voluntary donation to enter your own ‘Super Soup Lunch’ competition. You could blind-taste everyone’s soups and decide which is the best one – the soup-maker with the least points does the washing up!

 

  • Get your class at school involved? Why not add a global dimension to learning about food? Explore ingredients from around the world, with global recipes, and help your students understand what’s so important about the ‘Super Soup Lunch’.

 

  • Invite your local community for lunch. Why not set up a soup café at church or your village hall and ask for a voluntary donation for a delicious bowlful?

 

  • Or perhaps you could get your local café, pub or even restaurant to make their ‘soup of the day’ a ‘Super Soup Lunch’; the profits could then go to Christian Aid.

Kenyan Stew

 

Recipe serves 4

Ingredients

4x Chicken breasts, chopped

1x Medium onion

4x Tomatoes, chopped

1x Green pepper, chopped

Fresh coriander, chopped

Garlic Paste

3x Tablespoons oil

1x Tablespoon cornflour

1x Pint of Water

Method

  • Fry the chicken in a pan with a drizzle of oil until lightly browned. This should take approximately 15 minutes
  • Add the onions along with the garlic paste
  • Stir in the tomatoes and pepper, then add the water and bring to the boil
  • Turn heat down and add the chicken and leave to simmer for 15 minutes
  • Sift in the cornflour to thicken and leave to simmer on a very low heat for a further 15 minutes.
  • Serve and garnish with the coriander

All you have to do is place all of the ingredients needed for your favourite recipe inside the Soup Maker. Then it’s as simple as selecting either the smooth or chunky  setting, depending on your preference, and then waiting a short amount of time for the Soup Maker to blend and gently cook the ingredients for perfectly delicious homemade soup –  it really couldn’t be any easier. If your chunky soup is a bit too ‘chunky’ for your liking, there is a ‘blend’ button to blend the soup to your perfect consistency.

Food doesn’t get much better than fresh, homemade soup, but it can be complicated and time-consuming, especially when you’re juggling the demands of a busy life.
